ABOUT Idahar RECIPE

Idahar is very tasty and treditional recipe of chhattisgarh cuisine its very delicious and made with fresh arbi leaves.

Ingredients Serving: 8

  1. Colocasia leaves (Arbi leaves) 6
  2. Black gram 250 gram
  3. Sour Curd 250 gram
  4. Salt as per taste
  5. 1,1/2 table spoon red chilli powder
  6. 1 tablespoon termeric powder
  7. 1 tablespoon coriander powder
  8. Oil to fry and as required
  9. Mustered seeds 1 tablespoon
  10. 1/2 spoon cumin seeds
  11. 1/3 carom seeds
  12. 2 green chillies
  13. 1 finely chopped onion
  14. 8-10 garlic cut into small pieces
  15. Finely chopped coriander leaves

Instructions

  1. Soak the black gram atleast for 5 hours, wash it and remove the peels
  2. Took it into a mixer jar and make thick and fine paste
  3. Take fresh arbi leaves and wash it well
  4. In lentil paste add salt, termeric powder, red chilli powder, coriander powder, cumin and carom seeds mix ot well
  5. Spread this paste, over the back side of arbi leaves and roll it from upper side
  6. Cook these rolls in a steamer atleast for 15 minuts on full flame , steam both sides
  7. When it steamed, cut in samll size rolls
  8. Deep fry when become brown take away and keep aside
  9. In a pan heat 3 table spoon oil Add cumin seeds and mustered seeds,
  10. When splutter add green chillis and finely chopped garlic.
  11. Saute it then add finely chopped onion and fry it
  12. Add salt, 1/2 table spoon termeric powder, red chilli powder and coriander powder
  13. Mix it well
  14. Add beaten curd and mix it well cook in low medium flame for prepare kadhi. Stir consistently
  15. After 25 minuts add fried pieces and cook for 15 minuts in low flame
  16. Add coriander leaves, Serve hot with rice and enjoy the super yummyy taste of IDAHAR
