Rongi Ka Dum is a traditional recipe , which is quite popular among the natives of Himachal.

Ingredients Serving: 4

  1. Rongi / lobia 2 cups
  2. Palak leaves 10
  3. Ghee 3-4 tablespoons
  4. Cardamom green 2
  5. Cloves 2
  6. Dried red chilies 2
  7. Green chili 1
  8. Fenugreek powder 1/4 teaspoon
  9. Turmeric powder 1 teaspoon
  10. Special spice powder ( Mitha powder ) :
  11. Fennel seeds 1 tablespoon
  12. Cloves 2
  13. Mace 1 flower
  14. Cinnamon 1 inch stick
  15. Green cardamom 1

Instructions

  1. Firstly wash and soak 2 cups lobia for 4 hours in warm water .
  2. Grind palak leaves to a smooth purée and keep aside .
  3. For the mitha powder , powder the ingredients listed under spice section .
  4. In a heavy bottom vessel / Handi , add the soaked lobia with 4 cups water . Cover and cook till lobia is half cooked .
  5. Simmer the flame to low , very low .
  6. Now add 2 tablespoons ghee , whole spices , dry red chillies , green chilly , fenugreek powder , mitha powder .
  7. Add turmeric powder .
  8. Add the spinach purée .
  9. Add salt .
  10. Stir completely .
  11. Cover and cook for 5 minutes .
  12. Add remaining ghee .
  13. Open cook till water reduces , ghee oozes , lobia is completely soft and cooked .
  14. Gravy consistency is preferred .
  15. Rongi Ka Dum is ready .
  16. Serve hot with steamed rice / pahadi style Rotis.
