Ingredients Serving: 3

  1. Colocasia 1/2 kg
  2. Sesame oil 1/4 cup
  3. Caraway seeds 1 teaspoon
  4. Red chilly powder 1 tablespoon
  5. Coriander powder 1 teaspoon
  6. Dry mango powder 1 teaspoon
  7. Rock Salt 1.5 teaspoons
  8. Mint leaves 1 tablespoon

Instructions

  1. Wash , clean and boil the Colocasia till cooked . Don’t cook till mushy .
  2. Peel ,discard the skin of the boiled Arbi . Drain liquid and keep aside
  3. In a pan , heat oil for shallow frying .
  4. Fry the arbi till crunchy and golden .
  5. Drain excess oil by gently pressing the Arbis.
  6. In another pan , heat 3 tablespoons oil .
  7. Crackle caraway seeds .
  8. Simmer the flame to very low .
  9. Add red chilly powder .
  10. Add coriander powder.
  11. Add salt .
  12. Add the skin peeled arbis. Toss quickly to coat arbi in oil and Masala .
  13. Sprinkle dry mango powder . Toss.
  14. Roast the arbis till golden brown or until roasted .
  15. Add mint leaves . Toss .
  16. Sukhi Arbi is ready .
  17. Transfer to a plate .
  18. Serve hot .
