Ingredients Serving: 5

  1. Vegetable for Korma
  2. 2 carrots (peeled and chopped)cut in small pieces
  3. 1/2 cup sweet peas
  4. 1/2 cup chopped green beans
  5. 3/4th chopped potato
  6. 1 cup chopped cauliflower
  7. Other ingredients for Korma
  8. 1 medium sized sliced Onion
  9. 1/2 teaspoon GInger Garlic Paste
  10. 2 green chilies chopped
  11. 1/2 cup whipped yougurt
  12. 1/3 cup fresh heavy whipping cream
  13. 1/2 teaspoon Garam masala
  14. 1/2 teaspoon turmeric powder
  15. 1 teaspoon red chili powder
  16. 2 tablespoon Ghee
  17. Salt as required
  18. For the Paste
  19. 1 tablespoon Poppy seed
  20. 1 tablespoon Melon Seed
  21. 10 -12 Almonds
  22. 10 -12 Cashews
  23. For Garnish
  24. 1 tablespoon Ghee
  25. 6-7 Almonds blanched
  26. 10 Pistachios
  27. 10 Cashews
  28. 10 Walnuts
  29. 1 tablespoon Craisins or Raisins
  30. 1/2 tablespoon Melon seeds
  31. Mint leaves
  32. Saffron threads 10-12
  33. For Garam masala
  34. 2-3 Green Cardamom
  35. 1 Black Cardamom
  36. 1 Bay Leave
  37. 3 Cloves
  38. 2 Single Strands of Mace
  39. 1 inch stick Cinnamon

Instructions

  1. Soak all the dry fruits for 30-40 minutes in hot water.
  2. Boil all the vegetables covered for 30 minutes to make them tender.
  3. Remove the peels from the almonds and grind them all together and make it a fine paste.
  4. Heat Ghee in a heavy bottomed pan and add the spices, wait till it starts to release the aroma.
  5. Add the ginger-garlic paste and the chopped green Chilis and cook till the raw smell goes away.
  6. Now add the nut paste and hand-whipped yogurt sequentially, stir well.
  7. Now add the turmeric powder, red chili powder and stir it again. Stir continuously so the mixture doesn't stick to the bottom and get well cooked.
  8. Now is the time to add the boiled vegetables. Add water as per requirement season with salt and give it a good mix.
  9. Cover and simmer the veggies till they are cooked. Once they are cooked add the cream and stir it with the korma, cook for 1-2 minutes and switch it off the flame.
  10. For Garnishing: In a frying pan take ghee and add the blanched almonds and fry till pale golden , keep it aside. Now add pistachio, walnut,cashew and fry them till golden. Fry the craisin and mint leaves (for flavor)too.
  11. Add all the fried items to the Korma.
  12. Serve the Korma with Tandoori Roti, Parathas, Chapatis or plain rice or Pulao.
