Vegetable for Korma
2 carrots (peeled and chopped)cut in small pieces
1/2 cup sweet peas
1/2 cup chopped green beans
3/4th chopped potato
1 cup chopped cauliflower
Other ingredients for Korma
1 medium sized sliced Onion
1/2 teaspoon GInger Garlic Paste
2 green chilies chopped
1/2 cup whipped yougurt
1/3 cup fresh heavy whipping cream
1/2 teaspoon Garam masala
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
2 tablespoon Ghee
Salt as required
For the Paste
1 tablespoon Poppy seed
1 tablespoon Melon Seed
10 -12 Almonds
10 -12 Cashews
For Garnish
1 tablespoon Ghee
6-7 Almonds blanched
10 Pistachios
10 Cashews
10 Walnuts
1 tablespoon Craisins or Raisins
1/2 tablespoon Melon seeds
Mint leaves
Saffron threads 10-12
For Garam masala
2-3 Green Cardamom
1 Black Cardamom
1 Bay Leave
3 Cloves
2 Single Strands of Mace
1 inch stick Cinnamon
Instructions
Soak all the dry fruits for 30-40 minutes in hot water.
Boil all the vegetables covered for 30 minutes to make them tender.
Remove the peels from the almonds and grind them all together and make it a fine paste.
Heat Ghee in a heavy bottomed pan and add the spices, wait till it starts to release the aroma.
Add the ginger-garlic paste and the chopped green Chilis and cook till the raw smell goes away.
Now add the nut paste and hand-whipped yogurt sequentially, stir well.
Now add the turmeric powder, red chili powder and stir it again. Stir continuously so the mixture doesn't stick to the bottom and get well cooked.
Now is the time to add the boiled vegetables. Add water as per requirement season with salt and give it a good mix.
Cover and simmer the veggies till they are cooked. Once they are cooked add the cream and stir it with the korma, cook for 1-2 minutes and switch it off the flame.
For Garnishing: In a frying pan take ghee and add the blanched almonds and fry till pale golden , keep it aside. Now add pistachio, walnut,cashew and fry them till golden. Fry the craisin and mint leaves (for flavor)too.
Add all the fried items to the Korma.
Serve the Korma with Tandoori Roti, Parathas, Chapatis or plain rice or Pulao.
