ABOUT Razma Gogji RECIPE

Razma Gogji or Rajma Gogji is very popular kashmiri cuisine characterised by strong pungent flavour due to the use of mustard oil and whole Dry garam masalas along with red hue giving kashmiri mirch powder ., infused with shallow fried chunks of turnips . Turnips are called Gogji in kashmiri language.These shallow fried turnips in mustard oil add rustic flavour to the boiled kashmiri rajma beans masala dish.This delicious spicy red hued recipe uses a very popular pungent Kashmiri Masala called 'Vaer' which is in the form of dried compact disc made of amalgamation of all khade spicy garam masalas..Now as i didnot have this masala with me , i added all khade dry masalas separately ..This Unique dish of kashmiri Rajma beans is certainly different from the normal Rajma masala because of three factors.Firstly addition of fennel ( saunf ) .Secondly addition of turnips and thirdly cooking it in the Mustard oil ..All these factors make this recipe a unique Traditional Kashmiri Cuisine .I am sure you will like the aroma and taste of kashmiri cuisine...

Ingredients Serving: 5

  1. Red kidney kashmiri beans 500g
  2. Mustard oil 4 table spoon
  3. Heeng a pinch
  4. Fennel one teaspoon
  5. Cumin one teaspoon
  6. Ginger garlic paste 1 teaspoon
  7. Onions 2 medium sized
  8. Tomatoes 4 medium sized
  9. Turmeric 1 teaspoon
  10. Kashmiri mirch powder 1 teaspoon
  11. Red chillies dried 2-3
  12. Cardamom black 2
  13. Garam masala 1 table spoon
  14. Coriander leaves handful for garnishing

Instructions

  1. Wash and soak Rajma overnight .
  2. Boil them in the pressure cooker without discarding the water ..You can add more water too..Cook them for about 30 minutes and keep them aside for cooling ..
  3. Now peel and chop turnips in any shape ..and shallow fry them in the mustard oil and keep them aside.
  4. Heat mustard oil in a wok till its smoking point on a high flame..
  5. Now reduce the flame and add cumin , fennel , black cardamom , a pinch of heeng dried red chillied and allow them to splutter .
  6. Add ginger garlic paste ..saute till the raw smell goes away .
  7. Add onions chopped and fry them till the raw smell goes away .
  8. Add tomatoes .allow them to become tender.
  9. Add turmeric, kashmiri mirch powder , garam masala
  10. Now add shallow fried turnips and let them infuse in the sauteed spices.
  11. Add preboiled Rajma , adjust its consistency by adding water if necessary
  12. Add salt..
  13. Simmer it for sometimes so that all spices get infused in the beans ..
  14. Mix them throughly and keep it aside for sometime..
  15. Garnish them with coriander leaves.
  16. Serve them with plain boiled Rice .
  17. Trust me it tastes heavenly ..
