ABOUT Kung pao potatoes RECIPE

During one period, the Kung Pao was a man from Sichuan province whose favorite dish was spicy diced chicken with peanuts. So this dish was named after him. As we are vegetarians couldn't enjoy the chicken version so why worry when we have the humble Potato for rescue and here it is the Sanjeev Kapoor's version of the same!!

Ingredients Serving: 4

  1. 4 large : Potatoes, par boiled, peeled and cubed
  2. Few sprigs Green onions chopped
  3. 1 small onion sliced
  4. Few juliennes of Mixed peppers
  5. 2 tbsp oil
  6. An inch piece ginger chopped
  7. 4 garlic cloves chopped
  8. 2 tsp Corn flour
  9. 1 cup vegetable stock
  10. 2 tbsp chilli oil
  11. 2 dry red chillies broken to pieces
  12. 2 tbsp Soy sauce
  13. 1 tbsp Red chilli sauce
  14. 2 tsp sugar
  15. salt to taste
  16. 3 tbsp roasted peanuts

Instructions

  1. Dilute the corn starch with couple of spoons of vegetable stock n set aside until use...
  2. Heat oil in a non-stick pan. Add cubed potatoes. Shallow fry till light golden. Drain on absorbent paper.
  3. Heat chilli oil in another non-stick pan. Add red chillies and saute for a minute or so. Now stir in the sliced onion,peppers, ginger and garlic and saute till soft. Add soy sauce, red chilli sauce, sugar, salt and peanuts and give it a good mix.
  4. Now stir in the vegetable stock n bring this to a gentle boil n later stir in the corn starch mixture n cook until slightly thick..
  5. Add fried potatoes and mix gently. Sprinkle the chopped green onions and serve hot ..
