ABOUT Greek Revani RECIPE

A deliciously moist Semolina Cake in Lemon syrup.

Ingredients Serving: 8

  1. refined Semolina 100gm
  2. Caster sugar 100gm
  3. Flour 100gm
  4. Unsalted butter 100gm
  5. A pinch of Vanilla sugar
  6. Baking powder 1/4 tsp
  7. 3 eggs

Instructions

  1. Lemon Syrup recipe : In a sauce pan take 400 gms caster sugar, 1 cup water,a pinch of Vanilla sugar and 2 tbsp lemon juice and bring it to boil. Simmer for 15 minutes.
  2. Cake recipe : Preheat the oven to 180°C. Grease a 10 cm x 23 cm loaf tin.Beat all ingredients, except the eggs for 2-3 minutes by use of hand blender. Add eggs and beat for another 5 minutes. Spoon batter into the prepared tin.
  3. Bake it in oven for about 25 minutes. When cake is ready, pour the hot lemon syrup over hot cake, allowing it to absorb for few minutes.
  4. Take the cake out of tin and place on a plate. Slice it into cubes and garnish with lemon zest (grated peel).
