This delicious,refreshing Greek lentil salad or Fakes Salata as known in Greek is a popular dish in Greece ,a cold hearty salad devoured during spring and summer time .

Ingredients Serving: 2

  1. 1/2Cup Brown Puy Lentils
  2. 1 bay leaf
  3. 2 cloves Garlic,crushed
  4. 1 small Cucumber, sliced
  5. 1 small onion ,sliced
  6. 6-7 Cherry Tomatoes,halved
  7. 1/2 Red and yellow Bell pepper,sliced
  8. 5 Kalamata Olives,pitted and sliced
  9. 2 tablespoons crumbled Feta Cheese
  10. A few sprig s of Mint,chopped
  11. A handful parsley or Dill,chopped
  12. salt to taste
  13. Dressing
  14. 2 tbsp Extra virgin olive oil
  15. 1 tbsp red wine vinegar
  16. 1 tsp Whole grain mustard
  17. 1 clove garlic Minced
  18. A pinch of paprika
  19. Salt and pepper to taste

Instructions

  1. Wash the lentils and soak it in water for 15 minutes.Keep it aside and slice the veggies as required.
  2. Boil the lentils with garlic, bay leaf and salt to taste in a saucepan for nearly 15 minutes in a gentle simmer.Keep on checking as the lentils should be cooked but not mushy and should retain a slight tooth for the salad.
  3. In the meantime prepare the vinaigrette dressing for the salad, add all the ingredients for dressing in a bottle, shake vigorously till incorporated well and keep it in the fridge.
  4. When the lentils are cooked drain them and place under running water to stop the cooking process.
  5. When slightly cooled add the sliced cucumber, juicy tomatoes, olives, onion, red and yellow bell peppers, a little of the chopped herbs in a large bowl and toss with the chilled vinaigrette dressing.
  6. Sprinkle the creamy feta on it and chill for an hour. Add the rest of the fresh herbs before serving.
