ABOUT Menemen :A Turkish Delight RECIPE

Menemen is a traditional Turkish dish prepared with Eggs, Tomatoes, pepper and other spices. It is commonly taken as a breakfast with bread or can be taken as a main course as well. One of the main features of this preparation is that, it is mainly prepared family-style, that is, one dish for an entire group of people to share.

Ingredients Serving: 3

  1. 3 eggs; one can use up to 6 eggs as well for a large group
  2. 1 tablespoon olive oil
  3. 2 medium sized onions
  4. 1 red pepper
  5. 1 green pepper
  6. 2 – 3 Red Chillies
  7. 5 – 6 medium sized ripe Tomatoes
  8. Small bunch of Parsley
  9. 1 teaspoon of assorted Herb; we have used Oregano
  10. 1 teaspoon of crushed black Peppercorn
  11. 1 – 2 teaspoon of Sugar
  12. Salt to taste
  13. 8 – 9 tablespoon of thick Curd
  14. 3 GARLIC CLOVES
  15. 1 tablespoon of salted Butter

Instructions

  1. First, chop the Onions in thin slices; take the Red Pepper and Green pepper and then cut it form the middle. Then deseed it, and cut into thin slices. Keep them aside.
  2. Take the red Chillies and cut it from the middle and deseed it as well.
  3. Take the Parsley leaves and chop them.
  4. For this preparation, we need Tomatoes without their skin. To do this, take a deep pan, add 1 cup of water and bring it to boil. Take the Tomatoes; make a small X like cut at the bottom of each of them, and then put them in the water.
  5. After 45 – 60 seconds, one can see the skins of the Tomatoes are getting wrinkled. Transfer the Tomatoes in another bowl, filled with ice cubes and water.
  6. Once the Tomatoes are cold, take them out and peel their skin easily with the help of hand.
  7. Now, take a heavy-based frying pan. Add Olive oil, and heat it in medium flame. After 1 – 2 minutes, add sliced Onions, Green Pepper and Red Pepper. Cook until they soften.
  8. Add the chopped Tomatoes in it, Sugar, crushed black Peppercorn and Salt. Stir and mix well, and then cook it till the Tomatoes get soften.
  9. Cook the entire mixture in medium flame, until the liquid part is getting reduced. Now, using a wooden spoon or a normal spoon, create 3 pockets inside the mixture.
  10. Crack the eggs in the pocket, cover the lid and cook in low flame for another 2 – 3 minutes.
  11. After 3 minutes, or the upper crust of the Egg gets thicken, take out the pan from heat and season it with Parsley and Oregano. Turkish Menemen is ready to serve.
  12. To make the sauce, take a small bowl, add the Butter in it and heat it in low flame. Add the crushed Garlic cloves in it and fry for 1 minute. Take out the bowl from heat after 1 minute and add the thick Curd in it and beat it well.
  13. Serve the Curd and Garlic based sauce with the Menemen and Breads for a great Turkish Experience.
