ABOUT kulfi RECIPE

After making mousse, i had some leftover whipped cream. I added few more leftovers from the fridge and voila, creamy, yummy parsi style, malai kulfi is ready.

Ingredients Serving: 4

  1. 1 cup chilled leftovee whipped cream
  2. 1/4 cup leftover condensed milk
  3. 3 tsp leftover caramel ( if u don’t have it- replace with ¼ cup of more condensed milk )
  4. 2 slices of leftover white bread – remove sides and grind
  5. 3 spoon oats
  6. 1/2 cup Milk
  7. 1/4 cup toasted chopped nuts (I used pistachio and almonds) optional – use your favorite
  8. ¼ tsp sea salt
  9. Sugar/honey as required

Instructions

  1. Add saffron to warm milk.. keep aside for 10 mins.
  2. Meanwhile take out bread, caramel and whipped cream from the fridge.
  3. In a blender add the bread crumbs, condensed milk, and caramel to form a creamy puree
  4. Gentle fold in whipped cream (with stiff peaks)
  5. Next in a pan boil milk and cook oats for 3 minutes
  6. Add this to whipped cream mix.
  7. Add sea salt ,
  8. fold in the dry roasted nuts.. if the mix isn’t as sweet then add the sugar.
  9. then pour in desired bowls, tins and freeze 6-8 hours or overnight… enjoy!!!
