Delicious, aromatic biryani made with leftover string hoppers

Ingredients Serving: 4

  1. Refined oil 2 tablespoon
  2. Cinnamon stick 1 inch piece
  3. 2 cardamom
  4. 2 cloves
  5. 1 Brinji leaf
  6. 2 onions, thinly sliced
  7. 1 tablespoon Ginger garlic paste
  8. 1 teaspoon biryani powder
  9. 2 green chillies
  10. 1 tomato
  11. Carrot, beans, potato chopped, one cup
  12. 1/4 teaspoon red chilly powder
  13. A pinch of red food color
  14. 1/2 tumbler water
  15. Salt, required
  16. 1/4 cup Coriander leaves, chopped
  17. 1/4 cup mint leaves, chopped
  18. 2 tablespoon, ghee
  19. 3 cup Leftover string Hoppers,
  20. Fried onions and cashews for garnishing

Instructions

  1. Heat a pan with oil and add brinji leaf, cinnamon, cardamom, cloves.
  2. When heated enough add ginger garlic paste, green chilly and saute well
  3. Then add in onions and saute till it turns golden brown
  4. Add chopped veggies, tomato, red chilly powder, biryani powder and salt. Add water and allow it to boil for few minutes until it becomes thick gravy.
  5. Take out 3/4 of gravy and keep aside
  6. To the top of remaining gravy, spread the half of shredded string hoppers.
  7. Top it with remaining gravy and spread again the remaining string hoppers
  8. Spread the chopped mint and coriander leaves. Add ghee and close the pan now. Do not mix at this stage.
  9. Keep the pan in dum on low flame for 10 min.
  10. Garnish with fried onions and cashews. Serve hot with raita.
