ABOUT Moist Banana Buttermilk Cake with Cream Cheese Frosting RECIPE

A very popular American Canadian Dessert. This is my recipe for a moist banana buttermilk cake with cream cheese frosting .This is one of my old recipes which I am now sharing with BetterButter.

Ingredients Serving: 10

  1. For Cake batter:
  2. 1 1/2 cups ripe bananas, mashed(3 large bananas)
  3. 2 teaspoons lemon juice
  4. 3 cups unbleached enriched all purpose flour
  5. 1.5 teaspoons baking soda
  6. 1/4 teaspoon sea salt
  7. 3/4 cup unsalted butter, softened ( I used coconut butter, slightly melted)
  8. 2 cups dark brown sugar or white granulated sugar (You may also half white and half brown)
  9. 3 Large eggs at room temperature
  10. 2 teaspoons vanilla extract
  11. 1/4 tsp ground cinnamon
  12. 1 cups Buttermilk( add 1 tbsp lemon juice to 1 cup milk and leave it to stand for 10 min)
  13. 1/2 cup sour cream( light or full fat) at room temperature
  14. For Frosting:
  15. 1 cups unsalted butter, softened
  16. 2(8 ounce each) package cream cheese, softened
  17. 2 teaspoon vanilla extract
  18. 4 cups icing sugar(confectionary sugar)
  19. For garnishing :
  20. 2 tbsp Chopped walnuts
  21. OR 1/2 cup coconut powder

Instructions

  1. Preheat oven to 350 degrees F. Grease and flour two 9 inch pan.
  2. In a small bowl, mix mashed banana with the lemon juice. Set aside.
  3. In a medium size bowl, mix flour, baking soda, ground cinnamon and salt. Set aside.
  4. In a large mixing bowl, cream butter and sugar using an electric mixer, until light and fluffy. Beat in eggs, one at a time, then stir in vanilla. Beat in the sour cream.
  5. Beat in the flour mixture alternately with the buttermilk. Stir in banana mixture. Beat till all the flour is incorporated and you get a smooth cake batter. Do not overmix.
  6. Divide and pour batter into the two prepared pans and bake in preheated oven for 45-55 min or until toothpick inserted in center comes out clean.
  7. Remove from oven, cover and place the cakes directly into the freezer for 45 minutes. This will make the cake very moist.
  8. For the frosting, cream the butter and cream cheese until smooth. Beat in 1 teaspoon vanilla extract. Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.(I did the frosting mixture by hand in a bowl).
  9. Fill and Spread on cooled cake, covering the sides and the top of the cake.
  10. For topping, sprinkle coconut powder or chopped toasted walnuts over top of the frosting, as desired.
