Hasselback potatoes

Ingredients Serving: 2

  1. 2 big potatoes
  2. 1tsp Salt
  3. 1tsp crusehd pepper
  4. 1/2tsp dried herbs
  5. 1/4 cup grated cheddar cheese
  6. 2tbs butter
  7. 2tsp olive oil

Instructions

  1. Half boil the potatoes with skin in salt water.
  2. Using 2 chopstick as a cradle, place each potato on the chopsticks and make several parallel slits into each potato top making sure not to slice completely through.
  3. Blend the dried herbs with butter and brush between slits and crown of each potao.
  4. Now brush the potatoes with olive oil.
  5. Place the potatoes on a baking dish and sprinkle generous amount of salt and pepper.
  6. Bake for 25mins at 220C.
  7. Now add the grated cheese and bake for another 5-7mins.
