Inspired by the alfredo sauce, this beauty is moist and tender with a dramatic presentation of the cheese and the thousand island sauce. Baked to perfection, it is your perfect cheese baked chicken breasts

Ingredients Serving: 2

  1. 4 boneless skinless chicken breasts, slightly flattened
  2. salt- a pinch
  3. Black pepper- little
  4. Butter- 1 tsp
  5. Olive oil- 1/2 tsp
  6. 1 tbsp butter for sauce
  7. 2 tbsp all-purpose flour
  8. 1 clove garlic, chopped
  9. Cream -3/4 cup
  10. 1 1/4 cups full cream milk
  11. 1 tsp grated lemon zest
  12. Pinch of ground nutmeg
  13. Salt and Pepper, to taste
  14. 1/4 cup grated Parmesan cheese
  15. 1 tbsp chopped fresh parsley
  16. 1/4 cup grated Mozerella cheese
  17. Extra 1/4 cup grated cheese to be used as topping
  18. One tbsp of thousand Island Dressing to be mixed into the sauce at the end

Instructions

  1. Sauce : In a small saucepan, melt butter and add a little olive oil. Add flour and garlic, keep stirring to blend well.
  2. Add remaining ingredients including cream except fresh parsley and bring to a simmer, stirring until smooth and slightly thickened. Keep the sauce aside.
  3. Heat olive oil and 1 tbsp. butter in large pan over medium high heat. When oil is hot, add chicken ,salt,black pepper and thyme sprigs. Sear chicken until golden brown, about 3 minutes per side.
  4. Transfer chicken to oven to finish cooking. Bake chicken until almost cooked, about 20 minutes, depending on size of chicken breast ,turning it once in between.
  5. Now pour the sauce over the chicken breasts ,add extra grated cheese and put it back in the oven and bake for about ten minutes till the cheese starts melting and achieves a rather thick consistency.
  6. Add a little thousand island dressing on top before serving
