ABOUT Bread Kulchas RECIPE

Bakery style bread kulchas a very popular north Indian breads served with spicy chickpea curry and also is a famous street food of Delhi where these bread kulchas are served with thick, tangy, spicy dry pea curry topped with onions and lemon juice. These can be cooked easily on cooktop too, without any oven.

Ingredients Serving: 6

  1. Dry yeast 1+1/2 tesp
  2. Warm milk 2/3 cup
  3. Sugar 1 tbsp
  4. All purpose flour 2 cups
  5. Milk powder 1/3 cup
  6. Salt 1 tesp
  7. Fresh cream 1/4 cup
  8. Butter 1+1/2 tbsp
  9. Oil 1 tbsp

Instructions

  1. TAKE 3/4 CUP WARM MILK, ADD 1 TBSP SUGAR, 1.5 TSP DRY YEAST, MIX & SET ASIDE TO BLOOM
  2. TAKE 2 CUPS ALL PURPOSE FLOUR, ADD 1/4 CUP MILK POWDER, 1 TSP SALT
  3. MIX, ADD THE BLOOMED YEAST MIXTURE
  4. ADD 1/4 CUP FRESH CREAM, MIX WELL
  5. KNEAD INTO A DOUGH
  6. GRADUALLY ADD 1.5 TBSP BUTTER, KNEAD FOR 10 MINS
  7. COVER & SET ASIDE TO REST IN A BUTTER GREASED BOWL FOR 1 HOUR
  8. PUNCH DOWN THE RAISED DOUGH ON A FLOUR DUSTED SURFACE
  9. DIVIDE THE DOUGH INTO 6 EQUAL PORTIONS
  10. ROLL OUT EACH BALL INTO 4"-5" DISCS
  11. BRUSH ALL THE ROLLED OUT KULCHAS WITH OIL
  12. COVER & SET ASIDE TO REST FOR 30 MINS
  13. COVER & GRILL ON A TAVA ON LOW HEAT FOR 2 MINS
  14. FLIP & COOK COVERED FOR ANOTHER 1 MINUTE
  15. THE KULCHA IS READY, COVER & SET ASIDE TILL COMPLETELY COOL
  16. SERVE HOT WITH CHOLE
