ABOUT Potato Latkes RECIPE

These potato pancakes are traditionally fried and served during Hanukkah to symbolize the oil which burned for eight days. I have roasted these in oven.

Ingredients Serving: 4

  1. Shredded potatoes 1 lb
  2. 1 leek/1 bunch spring onion sliced
  3. 4 sweet peppers sliced thinly
  4. 2 Eggs
  5. 1 tbsp Cajun seasoning
  6. 1 tbsp garlic herbed Parmesan cheese
  7. 1/2 tsp dry Rosemary
  8. 1/2 tsp garlic powder
  9. 2 tbsp Flour
  10. Salt and Pepper as per taste
  11. Olive oil

Instructions

  1. Preheat oven to 350-375 Deg F (180-200 Deg C).
  2. Grate potatoes and immerse them in cold water.
  3. Meanwhile clean leek (green parts) thoroughly and slice thinly. Slice peppers thinly. Beat eggs.
  4. Drain water from potatoes and squeeze them tightly to remove all water.
  5. Mix all the ingredients together.
  6. Line a baking tray with oven proof parchment paper. Take handful of the mixture and place on the tray. Spray or dab oil on each latke.
  7. Roast in the oven for 20 minutes flipping them once in between baking time.
