Ingredients Serving: 3

  1. Multi millet flour 1 cup
  2. Eggs 2 nos
  3. Jaggery powder 3/4 cup
  4. Cardamom powder 1 tsp
  5. Milk 1 cup preferably cold
  6. Baking soda a pinch
  7. Salt half tsp

Instructions

  1. Break the eggs and whisk well with milk till it forms a smooth paste
  2. Add the sieved flour slowly into the egg and milk mixture while stirring all the time to remove lumps
  3. Mix the rest of the ingredients together with baking soda being added at the end. The batter now formed should be of dosa batter like consistency neither too thick nor watery
  4. Heat a non stick tava and pour a ladle full of the batter to form a thick pancake. Do not spread like a dosa
  5. Pour half a tsp of ghee or unsalted butter around the edges and cover cooked until holes form on the surface
  6. Flip over the pancake and cook on medium flame until done
  7. Garnish with powdered sugar for kids. I avoid sugar for adults hence served it with maple syrup or honey.
