Ingredients Serving: 10

  1. Ragi/ finger millet Flour 1/4 cup
  2. Whole wheat flour 1/4 cup
  3. Fruit salt a big pinch
  4. Rose water 1 tablespoon
  5. Jaggery 1/2 to 3/4 cup
  6. Water 1.5 cups or as required
  7. Ghee 6 tablespoons
  8. Honey as preferred
  9. Pistachios finely chopped fistful + extra for garnishing

Instructions

  1. In a wide bowl , take 1/4 cup Ragi Flour and 1/4 cup whole wheat flour .
  2. Heat 1.5 cups water and dissolve 1/2 to 3/4 cup jaggery completely by stirring continuously .
  3. Add 1 tablespoon rose water to the flours . g
  4. Add 1 big pinch fruit salt .
  5. Jaggery is dissolved completely . Switch off the heat .
  6. Add the filtered jaggery liquid to the flour while mixing other hand . If required add warm water.
  7. Whisk until smooth lump-free batter. Add a fistful of chopped pistachios to the batter .
  8. Heat a tawa . Smear ghee and spread throughout .
  9. Pour 1 .5 tablespoon full batter on the hot tawa into small puffy Malpuas . Smear a teaspoon ghee .
  10. Slow cook each side . Flip sides and cook patiently until done .
  11. Likewise cook all the Ragi Malpuas with the remaining ragi batter .
  12. Gently press to cook evenly .
  13. It’s done . Roll Malpuas to cylindrical rolls . Drizzle honey if preferred .Garnish with chopped
  14. pistachios . Ragi Malpuas are ready to serve .
