Arancini balls using leftover rice

Ingredients Serving: 4

  1. Left over rice - 2 cups
  2. Finely shredded garlic - 2 tsp
  3. Finely shredded coloured bell peppers - 1/4 cup each
  4. Mixed herbs - 2 tsp
  5. Chilly flakes - 2 tsp
  6. Grated cheddar cheese - 1/4 cup
  7. Grated mozerrella cheese - 1/4 cup
  8. Boiled and grated potato - 1/2 cup.( Optional )
  9. Panco crumbs - as required for coating
  10. All purpose flour - 2 to 3 tbsp
  11. Corn flour - 2 to 3 tbsp
  12. Coarsely ground pepper powder - 2 tsp
  13. Salt to taste
  14. Oil for frying
  15. Water

Instructions

  1. Mash the rice finely without any lumps.
  2. Mix all the items except all purpose flour, corn flour, water and oil together in a bowl and form a dough .
  3. Make lemon size balls from the dough and keep aside.
  4. In a bowl mix all purpose flour and corn flour alongwith little salt and ground pepper . Add water and make a thin paste and keep aside.
  5. Dip the balls in the above paste, roll it in panco crumbs so that it is covered fully.
  6. Heat oil in a pan, fry them in medium heat till the colour changes to golden brown.
  7. Serve it with mayonnaise or sauce.
