ABOUT Wheat-Semolina Tea-Time Mocha Cake | Eggless RECIPE

This eggless Tea-time cake is made using all healthy ingredients possible with everything already available in your pantry. Its made from whole wheat and sooji / rawa / semolina. Its spongy, and very delicious. Good for picnics and family gatherings and also for kids lunch boxes

Ingredients Serving: 10

  1. 3/4 cup fine semolina
  2. 1/2 cup Milk
  3. 1/4 cup whole wheat flour
  4. 1&1/2 tablespoons cocoa powder
  5. 3/4 teaspoon instant coffee powder
  6. Pinch of salt
  7. Baking powder 1 teaspoon
  8. Baking soda 1/4 teaspoon
  9. 1/4 cup Curd
  10. 1/2 cup brown sugar
  11. 1/4 cup ghee
  12. 3/4 teaspoon vanilla extract

Instructions

  1. In a small mixer pot grind together cocoa powder and coffee powder. Mocha powder is ready
  2. Sift together wheat flour, mocha powder, baking soda, baking powder, Salt
  3. In a bowl mix together semolina and milk, cover and set aside for 20 minutes.
  4. Preheat oven to 180C
  5. Grease and dust with flour a 6 inch round cake tin.
  6. Start preparing wet mixture. In a bowl cream together ghee and brown sugar.
  7. When the mixture becomes smooth add curd and beat well. Also add vanilla extract at this point.
  8. To this add semolina mixture and mix well
  9. Add dry flour to thus and combine well
  10. Pour in prepeared tin and bake for 30 minutes or until toothpick inserted comes out clean.
  11. Once done cool cake tin on wire rack.
  12. Invert the cake over a wire rack and let it cool further.
  13. Or serve warm with tea or coffee
