ABOUT Supergreen Salad with Raspberry Vinaigrette RECIPE

I have made this very simple salad and served it with my friend Frugal Hausfrau's raspberry vinaigrette.

Ingredients Serving: 4

  1. Vinaigrette Ingredients:
  2. Raspberry or red wine vinegar- 1/4 cup
  3. apple cider vinegar- 1/4 cup
  4. Dijon mustard- 1 tbsp
  5. olive oil- 2 tbsp
  6. Salt- 1/4 tsp
  7. Black pepper- 1/4 tsp
  8. Honey- 1/3rd cup
  9. Salad Ingredients:
  10. Organic Supergreens- 1 box
  11. Make your own mix with:
  12. Baby spinach
  13. Swiss chard
  14. Kale
  15. Arugula
  16. 1 onion thinly sliced
  17. 1 cucumber thinly sliced
  18. 1 cup Seedless green grapes (washed)
  19. 1 tbsp Cranberries
  20. To garnish:
  21. 1 Clementine peeled and sectioned
  22. 4 apricots peeled deseeded and cut
  23. walnut pieces- 1/2 cup ( optional)
  24. 1/4 cup Feta cheese ( 1 tbsp per plate)

Instructions

  1. Add all the Vinaigrette ingredients into a glass jar and shake well. This can also be stored in the refrigerator for 3-4 weeks
  2. Take a large salad bowl, add in the washed super greens or your own mix of veggies, the sliced onions, cucumber, green grapes and cranberries. Mix this well.
  3. Divide the contents of the salad equally between 4-6 plates
  4. Next add to each plate 3-4 pieces of the clementine sections, 3-4 slices of apricot.
  5. Top them with 1 tbsp chopped walnuts, 1/2-1 tbsp feta cheese and 1 tbsp of raspberry vinaigrette.
  6. Serve immediately to enjoy.
