ABOUT Sprouted Moong Pulao RECIPE

A lovely pulao full of essential protiens power packed in it. A super duper comfort food that makes you feel so good. Easy to make with some basic pantry staples, this one is sure to knock you down with it's simple and subtle flavours. Aromatic rice recipe that is a must try one friends. Give it a go. Ingredients Serving: 5

  1. Moong sprouts 2 cups
  2. Leftover rice 4-5 cups
  3. Salt 1 1/2 tbsp
  4. Red chilli flakes 1 tbsp
  5. Green chillies slit 3
  6. Dry red chillies 3
  7. Bay leaves 2
  8. Ghee 2-3 tbsp
  9. Curry leaves 10
  10. Onions sliced 2
  11. Black Mustard seeds 1 tsp
  12. Garam masala 1 tsp
  13. Cumin seeds 1 tsp
  14. Cinnamon stick 1
  15. Garlic mince 2 tsp

Instructions

  1. In a pan, heat ghee and add dry red chillies along with mustard and cumin seeds. Let them crackle a bit before adding garlic mince, curry leaves, bay leaves and cinnamon stick.
  2. Saute sliced onions now with ginger garlic mince until translucent. The raw smell of the onions should fade away before adding red chilli flakes and slit green chillies. You can add spices according to your choice.
  3. Finally add the sprouts and stir gently to mix all. Cover and cook just for about 7-8 minutes. Do not cook more than that. The crunch should be retained. And sprouts need not be cooked for a long time. A simple stir fry is more than enough.
  4. Lastly stir in the cooked rice and adjust salt at this point. Mix well and cover.
  5. Do it with very light hands without much pressure. Sprinkle garam masala for that lovely aroma.
  6. Simmer until ready to serve so that it gets heated up really well since we are using leftover rice here.
  7. Serve this piping hot flavourful pulao with ghee, pickle and any gravy of choice.
