Potatoes Pancakes are associated with European and Middle Eastern cuisine. They are shallow fried pancakes of grated or ground potatoes ,flour and eggs, often flavoured with grated garlic or onion and seasoning. This potatoes pancakes recipe is a healthy savoury dish made from sweet potatoes , zucchini, summer squash, flour, milk and eggs. The mint leaves gives a freshness to the flavor and full fat cheddar cheese adds to the richness.

Ingredients Serving: 3

  1. 2/3 cups ground or grated cooked sweet potatoes
  2. 1 large egg or 2 large egg whites
  3. 1/4 cups shredded zucchini
  4. 1/2 cup bottleneck summer squash puree
  5. 1 cup low fat or skim or whole milk
  6. 1 cup whole wheat flour or all purpose flour
  7. 1 tsp cayenne
  8. 1/2 tsp amchur powder (dry mango powder )
  9. 1 tsp garam masala powder
  10. Salt as required
  11. 1 tbsp chopped mint leaves
  12. 1 tsp grated or finely chopped garlic
  13. 1 tsp shredded coconut
  14. 1/2 cups shredded cheddar cheese
  15. Oil required for frying the pancakes

Instructions

  1. Squeeze out excess water from zucchini and using 2-3 kitchen paper towel or any absorbent material,remove any moisture or water remaining on the zucchini.
  2. Combine eggs or egg whites with flour and milk and whisk till the flour is fully incorporated and the batter is smooth.
  3. Add zucchini, squash puree, grated potatoes, cayenne, amchur powder,garam masala, garlic, salt as per taste, chopped mint leaves and shredded coconut.
  4. Stir and mix well till you get a smooth batter. Do not overmix, a few small chunks of potatoes are fine. The consistency of the batter should be thick but flowing.
  5. Heat a non stick pan and add 1 tsp oil. When the oil starts to simmer, add a ladle of the pancake batter and spread it into a round.
  6. Cook until the surface of pancake have some bubbles or bursts and the edges turn golden and light brown in colour.
  7. Drizzle some oil over the top. Flip carefully using a spatula and cook the other side till it turns crispy and golden light brown in colour. Take it out on a plate.
  8. Continue to cook other pancakes in similar way.
  9. Serve the savoury sweet potatoes pancakes hot with mint or coriander chutney.
