Ingredients Serving: 4

  1. Milk - 1/2 litre
  2. Leftover rice - half a bowl
  3. Powdered sugar as required
  4. Cardamom powder
  5. Ghee
  6. Rose water
  7. Almonds
  8. Cashews (for garnishing)
  9. Khoya (optional)

Instructions

  1. Take the leftover rice in a mixie jar and add sugar along with it
  2. Blend it nicely to a coarse paste. Keep it one side
  3. Boil milk well it gets reduced
  4. Add cardamom powder
  5. Then add rice paste to the boiled milk and mix well by preventing sticking to the bottom
  6. Meanwhile add a tbsp of ghee and saute Almonds and cashews
  7. Optional step: Add unsweetened khoya to the milk mixture if you want the phirni to be thick and creamy
  8. Add 2 drops of rose water
  9. Mix well till the phirni reaches thick and creamy consistency
  10. Finally add the nuts and turn off the flame
