ABOUT Leftover roti cutlets RECIPE

Leftover roti cutlet is a delicious way of using your leftover rotis. If you want to try something different with your leftover rotis you should try these cutlets. Not only this you can try cutlet sandwiches with them. All you need is some slices of bread and lettuce. Serve these yummy cutlets with pudina chutney and masala chai.

Ingredients Serving: 3

  1. Leftover rotis 4
  2. Mashed potatoes 2 cup
  3. Finely chopped green chilles 2-3
  4. Grated carrot 1 cup
  5. Mashed sweet corns 1/2 cup
  6. Finely chopped onions 1 cup
  7. Red chilli powder 1 tsp
  8. Amchur 1/2 tsp
  9. Blackpepper powder 1/2 tsp
  10. Red chilli flakes 1/2 tsp
  11. Lemon juice 1 tsp
  12. Breadcrumbs 1 cup
  13. Cornflour 1 tsp

Instructions

  1. To begin with Leftover roti cutlet,firstly grind the leftover rotis into a grainy mixture in a mixer grinder.
  2. Heat oil in a pan and add onions, green chillies and saute till translucent. Once it is done, add carrot and cook it for about a minute
  3. After a minute, add the mashed peas, corn and potatoes. Cook for about 20-30 seconds.
  4. After 20-30 seconds, add black pepper, chill flakes, amchoor powder and red chili powder. Mix everything well.
  5. Take out the mixture in a big bowl and add semolina, grainy leftover roti mixture, lemon and mix everything properly.
  6. Once it is done, make small patties out of it and keep it aside.
  7. Take corn flour in a bowl and add some water. Dip the patties in the corn flour mixture and then roll them in bread crumbs.
  8. The next step is to fry these cutlets. Heat oil in a pan and put the roti cutlets on it one by one when the oil is hot.
  9. Flip them over a couple of times till they become brown and crispy from both the sides.
  10. Serve Leftover Roti Cutlet with Dhaniya Pudina Chutney or Tomato Ketchup and enjoy it with a hot Masala Chai.
