Vegetable fried rice made from leftover rice

Ingredients Serving: 2

  1. Leftover rice - 1 cup
  2. Chopped onions - 1/4 cup
  3. Chopped beans - 1/4 cup
  4. Chopped carrots - 1/4 cup
  5. Chopped capsicum - 1/4cup
  6. Soya sauce - 1 and 1/2 tbspn
  7. Chopped spring onions - 1/4 cup
  8. Salt if required
  9. Olive Oil - 1 tbspn

Instructions

  1. In kadai add oil.
  2. Saute onions till it becomes pink.
  3. Add all vegetables except spring onions and saute it nicely
  4. Add soya sauce, cover and cook till carrot becomes little soft.
  5. Add rice, salt if required and saute it.
  6. Add spring onions and cover with lid for 1 min
  7. Open the lid and mix everything well.
  8. Serve
