Chicken Dum Biryani

Ingredients to make Chicken Dum Biryani

  • Chiken pieces 10 to 12
  • 1 cup curd
  • 1 tsp red chilli pwd
  • 1/2 tsp turmeric
  • Bunch of coriander leaves
  • Few cloves of garlic
  • Inch of ginger
  • 3-4 green chillies
  • 2 inch piece of coconut
  • 1 onion - golden fried
  • 1 onion sliced and fried till brown
  • 2 cups of basmati rice
  • Whole garam masala
  • Tandoori red colour
  • mint leaves
  • 1 tsp of shahi jeera
  • Piece of charcoal

How to make Chicken Dum Biryani

  1. Marinate chicken with curd,salt,red chilli pwd,and turmeric. Refrigerate for few hours.
  2. In a mixer jar put bunch of coriander leaves,golden fried onion,ginger,garlic,green chillies,and coconut. Add little water and grind to paste.
  3. In a thick bottom pan take some oil. Put in this paste and add marinated chicken with some more salt. Let it cook till chicken is almost done.
  4. In another pan boil water with whole garam masala and salt.Put soaked and washed rice to this and let it boil for 5 - 7 minutes. Strain the rice and let it cool for some time.
  5. Now layer this rice on top of cooked chicken. Sprinkle some red colour diluted in water or milk on this rice unevenly.
  6. Layer again with fried onion sliced. Put some shahi jeera and mint leaves. Cover n cook for 1/2 hour
  7. Keep this pan on a griddle. Don't cook directly on flame. Let this cook on dum.
  8. Lastly burn d piece of charcoal, put this in a small plate or bowl, place this on top of biryani,add a spoonful of ghee on this charcoal and close d lid immediately.
  9. This will give a smokey taste to d biryani. Serve hot.

My Tip:

Chicken can be replaced with vegetables to get veg dum biryani.

This is not Hyderabadi dum biryani. Chicken should be marinated with yogurt and all the garam masalas and then the half cooked rice and chicket should be kept on flame in a sealed pot
