ABOUT Leftover Rice Kofta RECIPE

Delicious kofte made of leftover cooked rice. This is my innovative dish. It can be served with chapatti or rice in main course.

Ingredients Serving: 4

  1. For kofta
  2. 1 cup leftover rice
  3. 2 tablespoon gram flour
  4. 1/2 cup boil and mash potato
  5. 1 finely chopped onion
  6. 1/2 tspoon ginger garlic paste
  7. 1 tspoon finely chopped green coriander
  8. 1/2 tspoon turmeric powder
  9. 1/2 tspoon red chilly powder
  10. 1/4 tspoon garam masala powder
  11. 1/2 tspoon salt or according to taste
  12. oil for deep fry
  13. For gravy
  14. 2 medium size onion(roughly choped)
  15. 2 medium size tomatoes(roughly chopped)
  16. 1 tspoon ginger garlic paste
  17. 1 tspoon turmeric powder
  18. 1 tspoon red chilly powder
  19. 1 tspoon coriander powder
  20. 1/2 tspoon garam masala powder
  21. 1 tspoon dried fenugreek leaves(kasoori methi)
  22. 2 bayleaf
  23. 1 table spoon oil
  24. Salt according to taste

Instructions

  1. For preparing koftas
  2. Take rice in a large mixing bowl and mash it.
  3. Add all ingridients except oil and mix well.
  4. Make a soft dough add some water ( if required)
  5. Make a ball table tennis size
  6. Deep fry in medium hot oil till golden.
  7. For preparing gravy
  8. In a mixer jar make onion tomato paste seperatly
  9. Add oil in another pan and keep it on the flame
  10. Once the oil become hot add bayleaf wait for 2 seconds then add onion paste and ginger garlic paste fry for 8-10 minutes.
  11. Then add all dry spices powder and tomatoes paste .
  12. Stir and continue to fry the masala paste till it starts leaving oil from the sides.
  13. Add 2 cup water to the masala paste and stir and simmer from 10-12 minutes.
  14. Lastly add the fried rice kofta balls.
  15. Switch off the flame and garnish with green coriander leaves and serve with chapati ,rice or naan.
