Stuffing : Heat 1 tsp olive oil in a pan and add chopped mushrooms to it.
Add 1/4 tsp salt. Let it cook till mushrooms get tender.
Add 1 tsp finely chopped and washed spinach to it. Add 1 brown sugar cube.
Cook till all water of mushroom dries up. Keep aside.
For Potatoes balls: Grate 2 boiled potatoes and add 1/4 tsp salt to it and mix. Now grease your palms with little olive oil and take a portion of grated potatoes and stuff with mushrooms mix prepared and make a ball.
Prepare two big and two small balls. It is optional to brush these balls with oil and bake them for a while.
For spinach gravy: Blanch the spinach and make puree. In a pan heat 1 tsp olive oil and add 2 tbsp spinach puree. Add 1/4 tsp salt and cook for few minutes. Add one brown sugar cube.
For potatoes cup: Peel and grate one raw potato. Wash it and add a pinch of salt and 2 drops of olive oil.
Now take a cupcake mould. Line it with this grated potato and cook on microwave high for 3-4 minutes. It will be nice crunchy and cooked.
Take it out let it cool then demould carefully.
To assemble : Place chopped and washed spinach layer at bottom . Sprinkle little salt over it. Now place a big potatoes ball and place small potato ball over it. Make the cap with strawberry.
Make eyes with blanched spinach and lips with strawberry and collar with raw spinach. Similarly prepare the Mrs. potato. Now in centre keep the potato cup and fill with spinach gravy and ready.
Place a strawberry in centre to impart sweetness to the gravy. Enjoy stuffed potatoes with spinach gravy.
