ABOUT Quick and Easy Dorappam Cakes RECIPE

At one point of time in many food groups everyone was going ga-ga about appe pan. Everything that was originally fried, was being made in appe pan. When I first bought my appe pan, I was scouting for recipes to try out, just then my friend Garima Sarolia Narera updated a recipe of Dorayaki or Dora Pancakes on her blog. I picked up that recipe and experimented in my appe pan, and boy I am so happy..it came out so nice and fluffy and attractive. My kids love it and now it is a regular tea timer at my place

Ingredients Serving: 4

  1. 4 Eggs
  2. 140 g (2/3 cup) powdered sugar
  3. 160 g (1⅓ cup) all-purpose flour/Maida (level cup)
  4. 1 tsp Baking powder
  5. 2 tbsp water
  6. A few drops of oil or butter (to brush the pan)
  7. Topping and filling of your choice. I used mixed frit Kissan Jam

Instructions

  1. In a large bowl whisk together the eggs, powdered sugar till well mixed and fluffy.
  2. Sift flour over the egg mix, add baking powder and mix well till the mixture is smooth.
  3. Add two tbsp water and mix well.
  4. Heat a non stick appe pan on medium heat.
  5. Drop 2-3 drops of oil and spread all over with a tissue
  6. With another tissue, wipe completely. The dry oil free surface of the pan ensures the characteristic evenly browned surface of the Dorayaki pancakes.
  7. Take a laddle or a scooper and till the appe pan slots with batter upto 3/4th
  8. Cover and cook over very low flame
  9. With the help of a wooden skewer and a fork or a butter knife, very gently turn it to the other side (I inserted the wooden skewer at the side slightly and then holding a fork in another hand, flipped it very gently)
  10. Cook the other side too for 30 seconds or till cooked completely
  11. These brown very quickly, so do not leave the pan alone even for a few seconds

If don't want to use eggs what else can be used
