ABOUT MACROLYUN PATATA ( Sindhi Macaroni & Potato Curry ) RECIPE

In Sindhi Macaroni is known as Macrolyun. Some of you might find this strange but in Sindhi Cuisine we cook macaroni like a sabzi with many variations.... with keema, phool patasha ( puffed lotus seeds) and also make many snacks with macaroni.

Ingredients Serving: 4

  1. Macaroni ... 1 cup
  2. Potatoes .... 3-4 ( cut into cubes)
  3. Tomatoes .. 2 large or 3 medium
  4. Ginger ..... 1 tsp (grated)
  5. Garlic ..... 1 tsp (optional)
  6. Tomato puree .. 3-4 tbsps
  7. Cumin seeds ...... 1 tbsp
  8. Turmeric powder ... 1/4 tsp
  9. Coriander powder .. 1 tsp
  10. Cumin powder ....... 1 tsp
  11. Red chilli powder .... 1/2 tsp
  12. Salt ....... to taste
  13. Oil ...... 3 tbsps
  14. Coriander leaves ... handful

Instructions

  1. Boil water in a pan adding salt and a tbsp. of oil. Tip in the macaroni. After 2-3 boils switch off the gas and cover the pan with a lid for 4-5 minutes.The macaroni would be cooked and doubled in size. Drain the water and set it aside.
  2. In a pan heat oil and add the cumin seeds.
  3. When they crackle add the ginger and garlic paste.
  4. Next add the tomatoes.
  5. Cover and simmer until the tomatoes are cooked.
  6. Now add the potatoes and saute adding all the spice powders mentioned above.
  7. Stir in the tomato puree.
  8. Add sufficient water ( depends on how much gravy you want ) and simmer.
  9. In the end tip in the macaroni and stir carefully.
  10. Finish with some coriander leaves. Simmer for half a minute on low flame.
  11. Serve with rotis.
