ABOUT Honey-Lime Roast Chicken RECIPE

This is a recipe that I created from random ingredients in my friend's pantry. And it turned out to be such a hit! The honey is not too sweet - and it balances beautifully with the lime zest and juice.

Ingredients Serving: 3

  1. 6 chicken drumsticks (approx 500 g)
  2. 8-10 Garlic cloves
  3. 1.5 inch ginger
  4. 3 green chillies (adjust according to your heat quotient)
  5. 1.5 tbsp honey
  6. 1 tsp freshly crushed black pepper
  7. 3 tbsp finely chopped coriander leaves
  8. 1 tsp Chilli Powder
  9. Juice from ½ a lime cheek
  10. Zest of one lime
  11. 2 tbsp Oil


  1. Preheat the oven to 180 C.
  2. Clean the chicken and score well down to the bone.
  3. Make a paste using the garlic, ginger, green chillies, honey, pepper, and chilli powder and marinate the chicken well with this.
  4. Add the lime zest, lime juice and chopped coriander to the marinated chicken and keep aside for at least 30 minutes.
  5. Now, put the oil in a frying pan and heat.
  6. Once it is hot enough, put in the chicken and seal it off till it is golden brown on all sides.
  7. Transfer into a baking tray covered in aluminium foil and cook for around 30-45 minutes.
  8. Turn the pieces over at half time.
  9. The chicken will be ready once the meat starts falling off the bone, and if you look closely the bone and meat should not remain pink.
  10. Remove (don't forget the sauce i.e. the chicken juices) and serve hot. Goes well as a starter or just with some simple dal and rice.
