Ingredients Serving: 8

  1. 500 gram mutton mince
  2. For Dry powder, 2 black cardamom
  3. 1 tsp caraway seeds
  4. 6 to 8 green cardamom
  5. 6 to 8 cloves
  6. 8 to 10 kabab chini
  7. 1 lace mace (javitri)
  8. 1/8 tsp nutmeg
  9. 3 star anise
  10. 1 inch cinnamon stick
  11. 2 stone flower
  12. 6 to 8 black pepper
  13. 1 tsp cumin seeds
  14. For Wet paste, 1 inch ginger chopped
  15. 10 to 12 garlic cloves
  16. 1 tbsp raw papaya cubes
  17. 1 tbsp lemon juice
  18. 1/2 cup brown onion
  19. 1 tbsp Charoli (Chironji)
  20. 10 to 12 cashew nuts
  21. 1 tbsp poppy seeds
  22. 12 to 15 dry rose petals
  23. 1 and 1/2 tbsp red chilli powder
  24. 3/4 tbsp or according to taste salt
  25. 1 tbsp saffron milk
  26. 1/4 cup chick pea flour
  27. 1 tsp rose water
  28. Few drops of kewra essence
  29. 1/2 cup cream
  30. Charcoal and foil for burn flavour
  31. 3/4 cup deai ghee
  32. Some lemon wedges,onion slice and fresh coriender for serve

Instructions

  1. ADD 2 BLACK CARDAMOMS, 1 TSP EACH OF CARAWAY & FENNEL SEEDS, 6-8 CLOVES TO A MIXER JAR
  2. ADD 6-8 GREEN CARDAMOMS, 8-10 KABAB CHINI
  3. ADD 1 MACE FLOWER, 1/8 PIECE OF NUTMEG, 3 STAR ANISE
  4. ADD A 1 INCH CINNAMON STICK, 2 STONE FLOWERS
  5. ADD 6-8 PEPPERCORNS, 1 TSP CUMIN SEEDS, GRIND THE SPICES
  6. SET ASIDE THE READY SPICE POWDER
  7. ADD A 1 INCH GINGER PIECE, 10-12 GARLIC CLOVES TO A MIXER JAR
  8. ADD 10-12 RAW PAPAYA CUBES, 1 TBSP LEMON JUICE, BLEND INTO A PASTE, SET ASIDE
  9. ADD 1/2 CUP FRIED ONIONS TO A MIXER JAR, 1 TBSP CHIRONJI, 10-12 CASHEWS TO A MIXER JAR
  10. ADD 1 TBSP POPPY SEEDS, 12-15 DRY ROSE PETALS, A LITTLE WATER, BLEND & SET ASIDE
  11. TAKE 500 GMS MUTTON MINCE, ADD THE DRY SPICE POWDER
  12. ADD THE RAW PAPAYA- GINGER-GARLIC PASTE
  13. ADD THE FRIED ONION-NUT-DRY ROSE PETAL PASTE
  14. ADD 1 TSP ROSE WATER, A FEW DROPS OF KEWRA ESSENCE
  15. ADD 1/4 CUP SAFFRON MILK, 1/2 CUP GRAM FLOUR
  16. ADD 1.5 TBSP RED CHILLI POWDER, SALT TO TASTE, MIX WELL
  17. ADD 1/2 CUP CREAM, SPREAD & MAKE A WELL IN THE CENTRE
  18. PLACE A BOWL OF FOIL INSIDE, KEEP A BURNING CHARCOAL, ADD 1 TBSP GHEE, COVER IMMEDIATELY
  19. SEAL THE SIDES & STEAM VENT, SET ASIDE FOR 1 HOUR
  20. REMOVE THE CHARCOAL & MIX THE MINCE
  21. SHAPE SMALL KEBABS OUT OF THE MIX WITH WET PALMS
  22. SHALLOW FRY THE KEBABS ON A TAVA IN HOT GHEE
  23. ADD SOME GHEE ON TOP
  24. FLIP & COOK FROM BOTH SIDES UNTIL GOLDEN BROWN
  25. SERVE HOT WITH CHUTNEY
