ABOUT Prune And Banana pancakes RECIPE

I improvised my banana pancake recipe to make these delicious pancakes which look like crepes. They aren't too think like crepes nor are they very thick and fluffy like pancakes. I can add some filling and roll them up or just eat this fruity goodness drizzled with a favourite syrup. A perfect evening snack.

Ingredients Serving: 4

  1. Whole wheat flour - 1 cup
  2. Ripe Banana - 1
  3. Pitted Prunes - 1/4 Cup
  4. Honey - 1 tablespoon and for serving
  5. Baking powder - 1/4 teaspoon
  6. salt - 1/4 teaspoon
  7. Cinnamon Powder - 1/4 teaspoon
  8. Milk - 1 cup
  9. Pure Vanilla Essence - 1/2 teaspoon (Optional)

Instructions

  1. Peel the banana and mash it in a large bowl till chunky.
  2. Chop the prunes into small pieces. Add to the banana.
  3. Add milk, vanilla, cinnamon powder and honey if using. Mix well.
  4. Sift together flour, baking powder, salt and add to the wet mixture.
  5. Mix it well with a fork. Move the fork in circular motion to incorporate air. This will make the batter light and fluffy
  6. Set aside for 5 minutes while you heat up a non stick or cured frying pan. The batter will start browning due to the banana so use it quickly or cover will cling wrap.
  7. Drizzle some oil evenly on it. To check if the heat is right sprinkle a few drops of water and if they skitter that means the oil is hot enough to cook.
  8. Pour some pancake mixture and spread it thin with spatula.
  9. Let it cook on low heat till the top starts to bubble and the edges start to appear crisp. Lift it a little to see if it has browned nicely.
  10. Loosen around the edges and flip it over with a broad spatula and cook on the other side till that side too is brown and nicely done.
  11. Flip only one time. If the pancake seems to stick to the pan , add a little butter or oil to loosen it.
  12. Take the pancake out in a serving plate and drizzle your favourite syrup or honey before serving them hot.
