ABOUT Spicy Potato Noodles Topped With A Sunny Side Up RECIPE

Chinese with a twist! Just like how my mom does it with improvisations of my own :)

Ingredients Serving: 2

  1. I cup Egg noodles boiled and drained.
  2. 1 large Potato chopped in small cubes.
  3. 1 large Onion
  4. 1 small cup of chopped Beans
  5. 1/2 cup of chopped Cauliflower
  6. 4-5 split Green chillies
  7. 5 garlic Cloves chopped
  8. 1 Egg
  9. 1 tbsp vegetable Oil
  10. 3 tsp Vinegar
  11. Pepper to taste
  12. Salt to taste

Instructions

  1. Take a large non-stick pot and heat oil in it. To this add potatoes and fry for 2 minutes on high flame.
  2. Now add onions and garlic. Saute for 2 minutes and drop vegetables.
  3. Fry till they cook through. Add green chilies. When the vegetables turn nice and crunchy add noodles.
  4. Saute for 3 minutes and season with salt and pepper. Mix in vinegar.
  5. Heat oil in a flat pan and fry an egg, sunny side up. Cook as per your choice.
  6. Skip this if you don’t like egg. Add this egg on top of noodles and serve.
