Ingredients Serving: 4

  1. 4 Ciabatta buns (or any hard bun)
  2. 6 tbsp mayonnaise
  3. 4 semi soft boiled eggs
  4. 1-2 tbsp chives or tender spring onion dark green part
  5. Salt and black pepper powder as per taste
  6. Butter (optional)

Instructions

  1. Preheat oven at 160-170 deg C. Toast the buns for 5-10 minutes till slightly crunchy. Place eggs in cold water and boil for 10 minutes for semi soft yolks.
  2. Place them ice water and then remove shells. Mash eggs with fork.
  3. Combine mayonnaise, salt, pepper, and chives with eggs. Whisk thoroughly.
  4. Apply little butter to buns if desired. Spread a generous helping of egg on the bun and serve with your preferred salad on the side.
