Green and nutritious pasta to die for.Children who do not eat green vegetables it is better to serve them this pasta. The creaminess of paneer and cashews just give it a heavenly taste. It can be served as a one pot meal. There are all the nutreints in this recipe.

Ingredients Serving: 2

  1. Fusilli pasta 1 cup
  2. Salt 1/2 tsp
  3. oil 2 tbsp
  4. 2 glasses of Water to boil pasta
  5. Baby spinach 1 cup washed and cleaned
  6. Basil leaves 1/2 cup
  7. Home made Paneer 1/2 cup
  8. Water soaked cashews 8-10
  9. Green chilli 1
  10. Green Cardamom 1
  11. Salt 1/2 tsp
  12. Olive oil 2 tbsp
  13. Black pepper powder 1/2 tsp
  14. Oregano 1/ 2
  15. milk

Instructions

  1. Boil 2 glasses of water.Add pasta ,oil and salt.
  2. Boil them for 10 minutes till al dente.Means it should not be too soft.
  3. Strain in a seive and wash in a running water so that pasta do not stick together.Better to stir with fork to separate them.
  4. Grind spinach leaves,basil leaves ,paneer, cardamom and soaked cashews in a grinder.Make a smooth paste.
  5. Green sauce is ready.
  6. Heat olive oil in a wok. Add spinach paste .Saute it for 2 minutes.
  7. Add whole lot of pasta and salt.
  8. Mix it quite well.
  9. Add oregano and black pepper.
  10. See the consistency if it is too thick add 1 cup of milk.Mix well. Cook it for 2 minutes. It is ready now.
  11. Take out in a serving bowl .
  12. Garnish with grated cheese.
  13. Serve hot .
