A creamy rice pudding for that something sweet cravings.

Kesar Phirni

Ingredients to make Kesar Phirni

  • 3 tablespoon rice, soaked
  • 1 litre milk
  • A little over 1/4 th cup sugar
  • A few strands of saffron
  • 1/2 teaspoon of crushed green cardamom
  • 1 tablespoon mixed nuts chopped for garnish

How to make Kesar Phirni

  1. Soak the rice for about 30 minutes after which grind to a coarse paste.
  2. Soak the saffron threads in a little warm milk and keep aside.
  3. Take a thick bottomed pan, add milk to it and boil.
  4. Once the milk starts to boil add the ground rice, mix thoroughly so that no lumps remain.
  5. Let it simmer for about 30 minutes or so, it will start to reduce.
  6. At this stage add the saffron and the sugar, let it simmer for some more time till you get a creamy consistency. Sprinkle cardamom powder and mix well.
  7. Chill in refrigerator for about 3 - 4 hours.
  8. Serve chilled and garnish with some nuts. Enjoy the creamy phirni.

My Tip:

Adjust the sweetness according to your taste.
