ABOUT Goat Cheese & Sundried Tomatoes Open Faced Sandwich RECIPE

Light snack option which provides a wholesome meal at the same time.

Ingredients Serving: 4

  1. 1 block goat cheese (garlic and herb flavor)
  2. 1 loaf french loaf
  3. 1 bottle sundried tomatoes
  4. 1/2 cup mayonnaise (olive oil based and eggless)
  5. Few baby spinach leaves
  6. Almond slivers, walnuts, pistachio for garnish
  7. Olive Oil for brushing

Instructions

  1. Preheat oven to 180 C. Slice french loaf at an angle keeping te slices little thick.
  2. Apply Olive oil with pastry brush on both sides of slice.
  3. Line a tray with oven proof parchment paper. Arrange slices on them and toast for 5 mins or till slightly crunchy.
  4. Remove from oven and assemble the sandwich.
  5. Combine sundried tomatoes with mayonnaise. Apply to one side of the slice. Arrange spinach leaves on top and chunks of goat cheese.
  6. Place few slices of sundried tomatoes with its oil and again toast them in oven for few minutes.
  7. Before serving, drizzle little olive oil and sprinkle nuts if desired on them. Substitute mozzarella cheese with goat cheese if preferred.
