Spaghetti in Chunky Tomato Sauce

ABOUT Spaghetti in Chunky Tomato Sauce RECIPE

A quick gourmet Italian pasta made with spaghetti noodles and a simple chunky hearty homemade sauce.

Ingredients Serving: 4

  1. 1 package spaghetti noodles (250 gm packet)
  2. 1 cup chopped onions
  3. 3 to 4 cloves of garlic, grated
  4. ½ cup chopped bell pepper/capsicum
  5. 8 to 10 mushrooms, chopped
  6. 2 cartons of ready made tomato puree (200 gms carton)
  7. 3 large tomatoes, roughly chopped
  8. 1 medium onion, chopped
  9. 3 green chillies/jalapenos, chopped
  10. ½ teaspoon dried oregano
  11. ½ teaspoon Italian seasoning
  12. Salt to taste
  13. 1 teaspoon sugar
  14. 2 to 3 tablespoons oil (preferable olive oil)
  15. Grated Parmesan cheese for serving (optional but tastes awesome!!)

Instructions

  1. TO MAKE THE SPAGHETTI SAUCE: First blend 3 large tomatoes, 1 medium onion and 3 green chilies/jalapenos to a fine puree.
  2. Heat a large, deep saucepan and add 2-3 tablespoons of oil. Once the oil is hot, add the onions and grated garlic and saute for about 2 to 3 minutes till the onions are soft.
  3. Stir in the mushrooms, bell peppers, oregano and Italian seasoning with the red chilli flakes and mix well.
  4. Cook for an additional 3 minutes. Stir in the fresh tomato-onion puree and 2 cartons of tomato puree along with salt to taste and 1 teaspoon of sugar and mix well.
  5. Bring to a boil. Reduce heat and simmer lightly covered for about 10 to 15 minutes until thick and chunky.
  6. Homemade spaghetti sauce is ready.
  7. Meanwhile, while the sauce is simmering away, prepare the spaghetti noodles according to package instructions. In a large pot of boiling water, add salt and the required amount of noodles and bring to a boil; cook until just cooked..
  8. Drain the noodles and serve with the freshly made chunky tomato sauce; sprinkle some grated Parmesan cheese on top (optional) and enjoy this easy gourmet Italian dinner tonight!!
