Ingredients Serving: 4

  1. 2 tbsp olive oil
  2. 1 onion diced
  3. 2 garlic cloves
  4. 1 carrot sliced
  5. 1 celery diced
  6. 6 cups vegetable broth
  7. 2 cups crushed tomatoes
  8. 3 cups cooked white beans
  9. 2 Bay leaves
  10. one teaspoon thyme
  11. 1 teaspoon Rosemary
  12. 200 grams dry pasta
  13. salt to taste
  14. pepper to taste
  15. 1 tablespoon tomato paste (optional)
  16. fresh grated cheese to garnish

Instructions

  1. In a big Pan heat olive oil on a medium high heat. Add onions and garlic. Saute 2 to 3 mins until onions start to soften.
  2. Add carrots and celery and saute for an additional 2 to 3 minutes.
  3. Add the broth, tomatoes, cooked beans, Bay, thyme and rosemary. Bring the mixture to a simmer.
  4. Add the dry pasta and simmer until the pasta is just al dente.
  5. Taste the soup and adjust Salt and Pepper as needed.
  6. Mix the tomato paste if you like the strong flavour of tomato.
  7. Remove the Bay leaf and garnish with grated cheese. Serve hot.
