ABOUT Honey Cake - Iyengar Bakery style RECIPE

This is one of my fav cake during my childhood, love to have this cake from local bakery shop. Adapted this recipe from a blog.

Ingredients Serving: 4

  1. For cake :
  2. Unsalted Butter - 150 gms (At room temperature)
  3. Powdered Sugar - 1/2 cup
  4. All Purpose Flour - 1 Cup
  5. Baking powder - 1 tsp
  6. Salt - 1/8 tsp (If using salted butter then skip the salt)
  7. Eggs - 2
  8. Milk - 2 tbsp
  9. Vanilla extract - 1 tsp
  10. For Honey Syrup:
  11. Water - 1/2 cup
  12. Honey - 1/4 cup
  13. Sugar - 2 tbsp
  14. Rose essence - 1 tsp
  15. Other Ingredients:
  16. Dessicated Coconut - 1/4 cup
  17. Mixed Fruit Jam - 2 tbsp (Here I used Strawberry jam)
  18. Sugar - 2 tbsp

Instructions

  1. Preheat the oven at 180 °C. Sieve the flour, salt & baking powder atleast 3 times. In a bowl beat butter and sugar till it becomes light and creamy. Add 1 egg at a time and beat it well.
  2. Add the other egg and continue to beat. Now add the half of the flour mixture ,mix it. Then add the remaining flour and combine it well.
  3. Add the milk to loosen the mixture. Mix the vanilla essence, pour the batter into a greased pan and bake it for 35 minutes until the toothpick inserted comes out clean. Cool it on a wire rack. Prick the cake with fork here.
  4. In a vessel boil the water and sugar, until the sugar gets dissolved. Turn off the flame when it is lukewarm. Mix the honey and rose essence. Pour the syrup on the cake while it is still warm.
  5. In a sauce pan melt the jam and sugar until the sugar gets dissolved. When it is slightly cool, apply the jam over the cake. Sprinkle the desiccated coconut over it.
  6. Slice the cake and serve it.

Childhood sweets have a different taste. Nice recipe, very unique
