Vermicelli is a kind of pasta that we Indian called sevain. They are traditional symbol of Eid Festival. We in Lucknow cook vermicelli in milk n sugar syrup called "Qiwam ",hence named vermicelli "Qiwami Sewain".Sharing you our family quick recipe for celebrating any occasion. It is simple to cook and take nearly moments to sweeten your taste buds.

Ingredients Serving: 8

  1. Vermicelli ( sevain ) 500 gms
  2. Sugar 100 gms
  3. Ghee ( clarified butter ) 100 gms.
  4. Milk 2 ltr
  5. Khoya 200 gms
  6. Khewra water 1/4 tsp or meetha itr 4 drops
  7. cardamom powder 1 tsp
  8. cardamom 2-4
  9. clove 2-4
  10. Silver leaf 1-2
  11. Nuts for garnish

Instructions

  1. Take ghee in a heavy bottomed pan.
  2. Fry clove and cardamon in ghee till they crackled.
  3. Now roast crushed vermicelli on very low flame.
  4. Roast vermicelli till they changed their colour and gives roasted aroma.
  5. Add milk and keep the flame now on medium.Keep stirring.
  6. Add orange red food colour 1/4 tsp.Mix thoroughly.
  7. When vermicelli are tender, add sugar.
  8. Keeping the flame medium let the sugar dissolve ,keep stirring.
  9. Reduce all the water.
  10. Keep the cooked vermicelli on simmer.(dum).
  11. Add 1/2 of the khoya and mix.keep 1/2 of the khoya for garnish.
  12. Add kehwra itr or kehwra water.
  13. Sprinkle cardamom powder.
  14. Serve Hot ,garnish with khoya,nuts and Silver leaf.
