ABOUT VEG MACARONI LO MEIN RECIPE

Lo Mein is a Cantonese dish usually made with egg noodles. Here i have made a vegetarian version of the dish using Macroni pasta

Ingredients Serving: 4

  1. 1 cup macaroni pasta
  2. 1/4 cup chopped Carrot
  3. 1/4 cup chopped Green Capsicum
  4. 1/4 cup sweet corn
  5. 4-5 spring onion
  6. 1 Teaspoon chopped garlic
  7. 1 teaspoon chopped Ginger
  8. 1 tablespoon olive oil
  9. 2 Tablespoon tomato sauce
  10. 1 teaspoon dark soy sauce
  11. 1 teaspoon green chilli sauce
  12. 1 tablespoon salt + as per taste
  13. 1/2 teaspoon black pepper powder
  14. 1 cube processed cheese, grated

Instructions

  1. In a large pot, heat 4 cups water, to this add 1 tbsp salt & 1 tsp oil. When water boils, add macaroni pasta & cook till the pasta is done. Strain excess water & wash under tap water to stop the cooking process
  2. Also boil the sweet corn till its well cooked.
  3. Chop the spring onion bulbs & green separately
  4. Heat olive oil in a pan
  5. Add ginger garlic & saute for half minute
  6. Next add the chopped onion bulbs, saute for a minute on high.
  7. Add a large pinch of salt & mix
  8. Then add chopped carrots & capsicum. Saute on high till it turns soft.
  9. Next add black pepper powder, tomato sauce, green chilli sauce & soy sauce. Mix everything well
  10. Then add the boiled macaroni & cheese.
  11. Cook for another one minute & its done
  12. Sprinkle spring onion greens & serve
