ABOUT Garlic and Mint Spicy Tahini Sauce RECIPE

Tahini sauce is made from finely ground sesame seeds paste. It is also known as sesame seeds butter or puree. It is very easy to make and can be stored in air tight container, refrigerated till 2 weeks.

Ingredients Serving: 4

  1. 1 cup white sesame seeds
  2. 2 tbsp olive oil (adjust as per required consistency )
  3. 8-10 green chillies ( optional and adjust as per spice preference )
  4. 1/2 cups water
  5. 1/2 cups fresh lemon juice
  6. 2 tsp mint leaves (optional )
  7. 6-8 garlic cloves
  8. salt as per taste

Instructions

  1. Dry roast the sesame seeds till they turn golden and light brown. Sesame seeds cook fast. So take care not to burn them.
  2. Cool the roasted sesame seeds for 3-4 minutes and then grind it coarsely in a mixer or food processor. Add olive oil through the feed tube. Pulse again for 1 to 2 minutes, scraping down the sides until you get a thick and fairly smooth paste.
  3. Add more oil if you want a thinner paste. Add water , lemon juice, garlic, green chillies, mint and salt . Process for 3-4 minutes till you get a smooth , thick and creamy consistency sauce.
  4. Pour it into a bowl. This sauce can be used to top hummus or chicken, pita sandwiches and varied other dishes like salads and dressing. Store it in air tight container and refrigerate it. It remains good till 2 weeks.
