Ingredients Serving: 4

  1. 1 punnet (250 gms) Button mushrooms
  2. 8-10 Cherry tomatoes
  3. 1 large onion chopped in big chunks
  4. 1 large bell pepper chopped in big chunks
  5. For mushrooms marination - 1 cup sour curd
  6. 1 teaspoon turmeric powder
  7. A pinch of asafoetida
  8. 1 teaspoon dried oregano
  9. 1 teaspoon red paprika powder
  10. 1 teaspoon black pepper
  11. 1 tablespoon ginger - Garlic paste
  12. 1 tablespoon corn starch
  13. For tomatoes marination - 1 cup extra virgin olive oil
  14. 1 teaspoon pepper
  15. 1 tablespoon ginger garlic paste
  16. salt to taste
  17. For mint mayo - 2 tablespoon mayonnaise
  18. 1 teaspoon green chili sauce
  19. 2 tablespoon finely chopped mint
  20. 1 teaspoon salt and pepper


  1. Wash, pat dry and prick mushrooms with a toothpick. Mix all the mushroom marinade ingredients and toss the mushrooms in it. Let it sit for at least 30-40 minutes
  2. Wash, pat dry and prick baby tomatoes. Mix all the tomato marinade ingredients and toss the tomatoes in it for at least 30-40 minutes.
  3. After marination preheat the oven grill on 180 for 10 minutes. Insert a rotating skewer in vegetable one after another. Brush the excess marinade on top.
  4. Season with salt, pepper and oregano. Grill for 10-12 minutes or until sizzling.
  5. For the sauce combine all the dipping ingredients into a smooth paste. Serve hot with mint mayonnaise.
