Ingredients Serving: 4

  1. 200 gms fettucini
  2. 1/4 cup Button mushrooms
  3. 1/4 cup sliced olives
  4. 1/2 cup parmesen cheese
  5. 3 tbsp butter
  6. 1 1/2 cup whip cream
  7. 1 tsp cracked pepper
  8. 1/2 tsp grated Nutmeg
  9. 1/2 tsp corsly minced garlic
  10. 1/2 tsp paprika


  1. Heat one cup of the whip cream and 2 tablespoons butter in a heavy saucepan over medium low heat until at a simmer. 
  2. Simmer for 12-15 minutes, stirring often, until it has reduced to about 2/3 cup.
  3. Remove from the heat and add the remaining 1/2 cup whip cream.
  4. Stir to combine then season with a bit of salt and freshly cracked pepper, to taste along with a pinch of freshly grated nutmeg.
  5. Heat the remaining 1 tablespoon of butter in a large skillet over medium heat. 
  6. Add button mushrooms and cook for 3 minutes then toss and continue to cook until light brown, about 3-4 minutes. 
  7. Add chopped olives and minced garlic and cook, stirring constantly for 1 minute. 
  8. Remove from the heat and set aside until needed.
  9. While the cream is reducing, cook the fettuccine in salted boiling water per package instructions. Reserving 1/4 cup of pasta water.
  10. Meanwhile, return the cream mixture to a simmer over medium-high heat, reduce heat to low then add the drained pasta and the parmesan cheese.
  11. Cook over low heat, tossing the pasta with tongs to combine, until the cheese is melted, the sauce has coated the pasta.
  12. 1-2 minutes. Stir in the reserved cooking water, if needed.
  13. Add the mushroom & olives mixture; stir to combine. Set aside to allow to thicken for a 1-2 minutes. 
  14. Toss again then serve in warmed bowls so the sauce stays nice and creamy. 
  15. Season with a bit more salt and paprika. Enjoy.
