Crispy baby potatoes with spicy mayonnaise, those multiple trips to Barbeque Nation inspired me to recreate these in my kitchen!

Ingredients Serving: 4

  1. Baby potatoes 750 grams ( Boiled with peel till tender / on medium heat for 2 whistles)
  2. 2 tsp oil ( If air frying ) / 1/2 cup oil ( If Shallow frying )
  3. 1/4 tsp salt
  4. 1/4 tsp pepper
  5. For spicy mayonnaise-
  6. 1/2 cup store bought mayonnaise
  7. 2 Tsp tomato ketchup
  8. 1/2 tsp chilli powder
  9. 1/4 tsp lemon juice
  10. 2 tbsp Finely chopped onions
  11. 1 tsp finely chopped green chilli
  12. 1 tsp finely chopped coriander
  13. salt to taste
  14. Chat masala for dusting.

Instructions

  1. 1. Pre-heat your air fryer at 200 degrees for 10 minutes / heat oil in a shallow pan.
  2. 2. Take the boiled potatoes and put them on a plate (Keep the skins on ). gently smash them to make a disc.
  3. 3. In a bowl, mix oil, salt and pepper and the toss the smashed potatoes till they are coated evenly ( Skip this step if you are shallow frying the potatoes )
  4. 4. Place the potatoes in the airfryer basket and cook at 200 degrees for 10-15 minutes until crisp, mix once in between to avoid burning.Remove onto a plate. If shallow frying, heat oil in a shallow pan, place the potatoes and cook on medium heat.
  5. 5. Mix all the ingredients listed under spicy mayonnaise.
  6. 6. Gently dress the potatoes with the spicy mayonnaise, dust some chat masala and garnish with coriander. Server with a wedge of lemon!
