Spaghetti doused in rich creamy tomato sauce using almond paste

Ingredients Serving: 3

  1. Tomatoes – 3 medium (chopped ~ 1 cup)
  2. Onion – 1 medium (chopped ~1/2 cup)
  3. Garlic – 4 cloves (chopped)
  4. Dried Italian herbs – 1/2 tablespoon
  5. Fine Salt – 1 teaspoon (as per taste)
  6. Red Chilli flakes – 1 teaspoon (as per spice level)
  7. Ground Black pepper - 1 teaspoon (as per spice level)
  8. Olive oil – 1 tablespoon
  9. Almonds – 1/4 cup (soaked)
  10. Water - 1/4 cup (for almond paste)
  11. Spaghetti - 300 grams
  12. Water – 4 cups (~1 liter)
  13. Crystal salt – 1 tablespoon (for cooking spaghetti)
  14. Olive oil – 1 teaspoon (for cooking spaghetti)

Instructions

  1. Take a sauce pan and bring a liter of water to a rolling boil.
  2. Add salt and olive oil. Stir to dissolve salt and add spaghetti. Ensure spaghetti is completely covered in water.
  3. Let it cook as per package instructions or until tender, approximately 12 to 15 minutes. Once cooked, turn off the stove.
  4. Strain the spaghetti through a colander and run through cold water to stop further cooking.
  5. Heat a frying pan with a tablespoon of olive oil.
  6. Add roughly chopped onion and garlic. Sauté till onions turn translucent.
  7. Add chopped tomatoes and sauté.
  8. Season it with dried Italian herbs, salt and red chilli flakes.
  9. Let it cook till tomatoes turn mushy.
  10. Once cooked, turn off the stove. Let it cool to room temperature.
  11. Purée when cooled to smooth sauce.
  12. Take a blender and add soaked almonds with water.
  13. Grind to a smooth almond paste.
  14. Heat the same frying pan. Add tomato sauce and add fresh almond paste.
  15. Stir well to combine and simmer for 2 minutes. Season with red chilli flakes and black pepper. Turn off the stove.
  16. Toss the spaghetti with creamy tomato sauce.
  17. Serve warm with a few basil leaves and cheese gratings.
  18. To impress kids, you can also stuff spaghetti in dosa.
