ABOUT Schezwan Sauce RECIPE

Schezwan Sauce is a Chinese sauce which goes well with fried rice and noodles.Homemade schezwan is easy and can be stored for future use.

Ingredients Serving: 6

  1. 1/3 cup olive oil
  2. 3 tsp garlic paste
  3. 3 1/2 tsp ginger paste
  4. 6 small Sambar onions chopped
  5. 15-20 Kashmiri Red Chilies and 4 Red dry chilly (Soaked in water for half an hour)
  6. 1 tsp soy sauce
  7. 1 tsp vinegar
  8. 1/4 cup water
  9. 2 tsp tomato ketchup
  10. 3 tsp sugar
  11. Salt to taste
  12. 1/2 tsp chilly flakes

Instructions

  1. Heat oil in a pan and add garlic and ginger paste.Saute on a low flame till the raw aroma goes.
  2. Add the minced onions and let them cook on a low flame. In the meanwhile,paste the soaked dry red chilly(after discarding the excess water).
  3. Once the onions melts, add chilies paste, soy sauce, vinegar, ketchup, sugar, salt and 1/4 cup water.Bring this to a boil and simmer till the sauce thickens. Oil should have separated, and there should be some oil floating on top.
  4. Switch off the flame and let it cool.Spread 1/2 tsp of chilly flakes. Store in an airtight container and store in the refrigerator for up to 15 days.Enjoy with noodles or fried rice
